Food Safety Levels 1 & 2

 

Level 1 (half day course)

suitable for a variety of candidates, including new employees with minimal or no prior food safety knowledge, employees who handle low risk or wrapped and those who work front of house including waiting staff and kitchen porters.

Topics covered include:

  • Food safety (food hygiene, hazards and responsibilities)
  • Personal Hygiene
  • Cleaning
  • Contamination

A 15 question multiple choice examination is to be completed at the end of the course. To be awarded a pass, 10 correct answers need to be achieved.

Level 2 (1 day)

When preparing food a level 2 accredited course is needed. The level 2 course is QCA accredited.

This course is neccessary for all people working with and preparing food. The course will cover the following:

  • Legislation
  • Food safety and hygiene hazards
  • Temperature control
  • Refrigeration, chilling and cold holding
  • Cooking, hot holding and reheating
  • Food handling
  • Principles of safe food storage
  • Cleaning
  • Food premises and equipment

A 30 question multiple choice examination needs to be completed at the end of the course. 20 questions or more need to be answered correctly to be awarded a pass.
